Egg Based Diet


With our finances dwindled to a rather frightening level, it appears eggs are what’s for eating. Lots and lots of eggs.

Fried eggs, sunny-side up eggs, scrambled eggs, hard boiled eggs, soft boiled eggs, egg salad sandwiches, egg soup, huevos rancheros, omelets, frittatas, quiches; eggs for breakfast, lunch, dinner and even dessert! I have a bad feeling I’m going to be so sick of eggs before the week is up I’ll want to forage the forest behind our house for wild berries. Something tells me I’m going to want to scour over The Farmstead Egg Cookbook by Terry Golson for new recipes and ideas to prevent that from happening… or Pinterest.
